Nothing beats a good ol’ slab of flapjack when you are in need of sustenance and one of my favourite recipes is this one from Good Housekeeping. The lovely thing with this recipe is that you can mix & match the ‘extras’ like the raisins.
- 200g (7oz) butter
- 150g (5oz) demerara sugar
- 4tbsp golden syrup
- 1tsp ground cinnamon
- Finely grated zest of ½-1 orange, to taste
- 400g (14oz) jumbo oats
- 100g (3½oz) raisins or sultanas
1 Preheat oven to 190°C (170°C fan) mark 5. Grease and line a 20.5cm (8in) square baking tin with parchment paper.
2 Melt the butter in a large pan and add the sugar, syrup, cinnamon and orange zest. Stir and heat gently until the sugar dissolves.
3 Remove pan from heat and stir in the oats and raisins.
4 Press into tin and bake for 15-20min until lightly golden. Leave to cool before cutting into squares.
